Beth’s Speculatius Cookies (Windmill Cookies)
Ingredients:
2 ¼ cups unsifted flour
¾ ts ground cinnamon
½ ts ground cardamom
¼ ts ground nutmeg
¼ ts ground cloves
¼ ts ground mace
1 pn salt
¾ c (1-1/2 sticks) sweet butter
1 c confectioners’ sugar
1 egg
zested rind of ½ – 1 orange
½ cup almond slices
Fluff up the flour in the sack or container with a fork before measuring. Beat butter with sugar in a large bowl until light and fluffy; beat in egg and orange rind. Combine flour, cinnamon, cardamom, nutmeg, cloves, mace and salt. Stir in flour mixture and then almonds, blending well. Refrigerate in (2) roll(s) over night. Cut very thinly and bake at 350* for 10-11 minutes or until edges and bottoms of some are golden. Cool completely before sealing into container.
