Best Pumpkin

Ok, so they’re kind of muffins, but they are wicked good and you can just add chocolate chips and cream cheese frosting if you hate the word “muffin.”

Best Pumpkin Muffins EVER:

Dry ingredients:
3 cups stone ground whole wheat flour (much coarser than regular whole wheat)
2 cups sugar
1-1/2 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 tsp cloves
3/4 tsp cinnamon
1 tsp nutmeg

Wet ingredients:
1/2 cup oil
3 eggs
1 can pumpkin (1-1/2 cups)
1/2 cup H2O
1 cup raisins, 1 cup walnuts (some kids consider these ingredients optional)

Sift the dry ingredients and blend them together. Fold in the wet ingredients. Let it stand for an hour at room temperature. Preheat the oven to 400* Now, its ready for the greased or papered muffins tins-makes about 24 small or 15 large.

Bake for 20-24min depending on size.
